i've found my gixxer to be very comfortable. Don't get rider fatigue until 6-7+ hours. Great commute bike, even in the rain on the highway, its aerodynamic enough you don't get very wet. I usually get 45+mpg commuting, and conservative highway driving (75-80mph) I've gotten well over 50 mpg. Plus its fun as fuck. You should be able to pick up a nice 2004 600 for that money if you look and have patience.

If you think that's comfortable, take a real sport tourer for a day long ride

Have you looked into the SV650? It's in the same class as the FZ6.

Fast enough. According to the owner's group, it will top out at a GPS verified speed just over 140.

I've really enjoyed the bike and hate to sell it. It's super comfortable, has lots of torque, and is easy to ride fast.

'94 to '97 VFR750 or 5th gen VFR800. No question best do it all bike for what you can pick one up for. If you tend to be in a hurry to get places the CBR1100XX is a surprisingly excellent and bullet proof sport touring bike for the money if you can find one unmolested. Both were on my short list before I stole my ST3.
