A really good example of this is riding 337 in Indiana. The hills there can "launch" you and your bike. I have ridden the roads enough to learn which ones do it, and I back off on those hills, and roll on once over.
To keep your butt planted though, I squeeze with my knees... I am a big guy too, and I have almost launched myself over my bars because of the bike staying fairly planted but me not...
Best thing, slow down before the hill, otherwise get used to it and speed up, get both wheels off the ground...
